Gluten-free carrot muffin

Ingredients

2 eggs
1 large raw carrot (200g)
1/4 xic extra virgin coconut oil
1/2 xic demerara sugar
1 xic oat flour
1/2 xic oat bran
1/4 xic almond flour
1 tbsp baking powder
Pinch of cinnamon to taste
Chocolate chips 70%

Directions

Blend eggs, carrots, coconut oil and sugar in a blender.

Transfer to a bowl and add the flour and cinnamon powder. Mix and finally add the yeast. Stir and fill the molds. Finish with chocolate chips (optional. You can use more chocolate chips too).
