Raw Cauliflower Tabbouleh with Chickpeas

Ingredients:

  • 1.5 cups shredded cauliflower (200g)
  • ½ cup diced Japanese cucumber
  • 1 cup cooked chickpeas
  • ½ cup chopped parsley
  • ½ cup chopped mint
  • ½ cup chopped tomatoes
  • 3 tablespoons yellow bell pepper
  • ½ red onion, chopped
  • Pomegranate seeds (optional)

How to Prepare

Now that we have all the ingredients, let’s get down to business. Follow these simple steps to make your Raw Cauliflower Tabbouleh with Chickpeas:

Grind the cauliflower in a food processor until it reaches smaller sizes (be careful not to over-beat it and turn it into a cream).

Add all the chopped ingredients to a bowl. Mix well

Season with lemon, vinegar, olive oil and salt

Side dish: Brown rice (2 tablespoons) + Carioca beans (1 ladle)
